Lately.

Egg Muffins.

Breakfast foods are the best. Can I get an amen?!

 Yet it's so easy to skip when we're in a rush. I'm guilty of waking up 10 minutes before needing to leave for work and only having enough time to throw clothes on and dash out of the door. So here's a simple recipe to do on those Sunday nights and you're set with your breakfast for that crazy week! You're welcome in advance ;)

Egg Muffins.

Ingredients:
1/4 cup Shredded Cheese
4 Tomatoes 
1/2 cup Spinach
1 cup sliced ham (or 4 slices of turkey bacon)
12 egg whites


Instructions:
1. Preheat oven to 350*


2. Dice tomatoes, ham, & spinach
Some like to also add onions




3. Cover pan with non stick spray and add diced ingredients with cheese





4. Add egg whites to 1/3 from the top





5. Put in oven for 20-25 minutes. Wait until the top of the eggs are golden.
Let sit for 10-15 minutes




On those rushed mornings, throw them in the microwave for 30 seconds and you're good.
Don't compromise breakfast. 
You're worth it ;)

You should know, my mother who cringes when I say "it's healthy" when cooking even liked this recipe.

Adventures with Maxwell


Lets just get this out there!
I am the the stereotypical single twenty-something girl that posts too many pictures of her dog. 
I know it. You know it. We all know it.
Just embrace it my precious friends.

Over the weekend the weather was gorgeous, so I took my dog Max to San Marco. Which led to OneSpark (post here). And goodness! Funniest things ever!


  • We took the SkyWay that's jammed pack of people and I told a mother and daughter next to me, "I figured a dog would be my form of pepper spray." Please note how terrified he looks in the picture. I told them I should put Max on my lap like he's a lap dog (Max is a good 60 pounds or so) to make more room kidding around and they just looked at me like I was crazy. Not many get my humor.
  • There were people dressed up as human-sized carrots walking around OneSpark and Max was mortified and hid behind me.
  • Max brushed against a guy and the guy goes, "WOAH! Oh, it's a dog. I thought someone had really hairy legs."
  • At the Landing two gigantic great danes tried to jump him and he just stood there in shock. Oh, and he was scared of the water fountains. 
  • While waiting for the SkyWay, Max was laying on the ground as an intoxicated man continued to pet and talk to him like they were best friends. 
Max is a horrible guard dog.

It is most definitely no New York City or Savannah, Georgia, but it does have it's charm and pretty snapshots if you look for it.

This is meant for children, but I think it's safe that 23 year olds can have the time of their life there as well.

Exploring Historic St. Augustine.



Long time no see my people! I've been MIA for a while but I'm back. Between 2+ jobs, online classes, and trying to squeeze in a social life, there leaves a very small slot of time for blogging. But with the free time I can I can get in, I'm trying to look for different places to discover in my area. 


Location: Historic St. Augustine
I've been to St. Augustine countless times aimlessly wondering up and down St. George Street and never explored some of the historic landmarks.
